RICOTTA TOAST WITH PANCETTA


 

Dressed up toast is always my go to meal. When I just need something easy to make but I still want to be creative in the kitchen, basically code for whatever I need to get rid of in my fridge. Thats exactly what happened with this ricotta toast, I planned on using the ricotta for something else but never used it. So slathered it on toast and added pancetta which I also planned to use in a dish but didn't. Drizzled it in Mike's Hot Honey and bam a savory toast.

 

ingredients

olive oil
4 thick slices rye bread, lightly toasted
1 cup ricotta cheese, divided
salt
freshly ground black pepper
4 oz pancetta
Mike's Hot Honey

 

preparation

Preheat oven to 350 degrees

Drizzle olive oil over bread, place bread on a baking pan or directly on the rack for about 10 minutes, flipping it halfway through. Cook until the bread is golden brown.

Spread 1/4 cup ricotta on each slice of toast. Drizzle with olive oil and season with salt and pepper. Top with pancetta and honey
