MISO BUTTER MASHED SWEET POTATOES
I read an article awhile ago in the Huffington Post about the difference between red, white, and yellow miso and how to use them in different dishes. Before I read this I always thought Miso was only used in Miso Soup. After I read that article I was inspired to start cooking more with miso whenever the opportunity presents it self.
I have really been wanting to change up typical meals my family eats during Christmas because its usually the same as Thanksgiving. As much as I love mashed potatoes, they were the first on my mind that I had to switch up, and I made the right choice! This miso butter is like crack, it is so delicious and gives the sweet potatoes an umami flavor.
4 lbs Sweet Potatoes , peeled, cut in half (about 4 large potatoes)
3 tablespoon unsalted butter, soften
2 tablespoon white miso
freshly ground pepper
Place potatoes in a large pot and pour in cold water to cover. Add some salt and bring to a boil. Reduce heat and simmer until potatoes are very tender.
Meanwhile in a small bowl mix butter and miso together
Drain potatoes and and return potatoes to pot and start mashing with a wooden spoon. Add miso butter, and mash until smooth. Season to taste with salt and pepper.
