SAVORY OATMEAL PORRIDGE
I am very particular when it comes to oatmeal, I honestly think its one of the easiest foods to fuck up cooking. Its taken me a while to perfect it.
I discovered you can make porridge out of oatmeal, when one day I was making oatmeal and I accidentally added too much water and cooked the oatmeal way longer than normal and boom I made an oatmeal porridge. I thought I had invented something. When I searched online I saw numerous articles on oatmeal porridge, I guess what I made wasn't that special. I also saw lots of articles on making oatmeal savory, which made me so happy because as much as I do enjoy oatmeal with fruit and granola, I was excited to switch it up. Cracking a the yolk of fried egg into oatmeal became an unexpected combo and I was never turning back .
2 cups gluten-free rolled oats
1 teaspoon salt
freshly ground black pepper
In a large saucepan bring the 8 cups of water to boil. Add oatmeal, stirring. Add the salt and reduce the heat to low and allow the porridge to simmer for 30-40 minutes, stirring occasionally.
Once oatmeal is cooked, divide between bowls. Season to taste with salt and black pepper. Fold in with cheddar cheese. Top with fried egg, green onions, and bacon. Serve with hot sauce.
***Leftovers can be covered and refrigerated for another morning. To reheat, simply add a little hot water or milk to thin out the porridge and then place in the microwave or over stove top in a saucepan until warm.
