SAUTEED SPINACH WITH KALAMATA OLIVES TOPPED WITH FETA
My mom makes insanely good spinach, its the best of the best. She adds kalamata olives, tomatoes, lots of garlic and cooks it in a wok. When I eat it I am like no way this is healthy because its so savory. This recipe is a take on my mom's and how she would make it with my own twist added to the recipe.
2 TABLESPOON olive OLIVE
1/2 yellow onion, thinly sliced
1 1/2 POUNDS BABY SPINACH LEAVES, CLEANED
1 tablespoon fresh lemon juice
8 kalamta olives chopped
1/4 cup crumbled feta
freshly ground black pepper
Heat olive oil in a large skillet over medium heat. Add onion cook until softened about 5-10 minutes.
Add spinach, lemon juice, and olives, cook until the spinach is slightly wilted. Season to taste with salt and pepper remove from skillet and top with feta.
