SAGE GARLIC ROASTED FINGERLING POTATOES
I really like cooking fingerling potatoes because they are easy to prep and don't take much time. You can cook them whole or sliced, there is not much needed to do to cook these, just make sure to add olive oil and pop in the oven. I decided to jazz them up this time, and the combination of Sage and Garlic make these potatoes a tasty addition to any meal.
1 pound fingerling potatoes, cut into length wise
3 tablespoons olive oil
3 garlic cloves, minced
1/4 cup sage, minced
1 tablespoon fresh lemon juice
Freshly ground pepper
Preheat oven to 450 degrees.
Toss potatoes with olive oil, garlic, sage, lemon juice salt, and pepper in a bowl. Spread potatoes out on baking sheet and then roast, stirring occasionally, until crispy and tender, about 20 minutes.
