AVOCADO TOAST WITH SMOKED SALMON
I know avocado toast, ugh its so trendy right now but damn I love it so much. It is the only thing I ever want to eat for breakfast and whoever created the trend I want to meet and kiss!
Most restaurants these days have Avocado toast on their menu but always cost way too much for what they are providing, its just mashed avocado on toast why am I paying over $15? I prefer to make avocado toast and enjoy it in the comfort of my home.
There are so many variations of how I like to eat my Avocado Toast; sometimes I like it plain with just salt and pepper, or with anchovies and tomatoes, but how I really love mine is with smoked salmon and a fried egg on top.
4 SLICES BREAD, MY FAVORITE SOURDOUGH
FRESHLY GROUND BLACK PEPPER
2 LARGE AVOCADOS, RIPED
4 OZ lox
Preheat oven to 350 degrees
Drizzle olive oil over bread, place bread on a baking pan or directly on the rack for about 10 minutes, flipping it halfway through. Cook until the bread is golden brown.
Meanwhile, cut the avocado in half, remove pit, and scoop the flesh into a bowl. Mash avocado with a fork, keeping the texture slightly chunky.
Spread mashed avocado over bread, drizzle with olive oil and season with salt and pepper. Top with lox and a fried egg.
