CAULIFLOWER MASH


 

 I am always craving mashed potatoes, but sometimes I need to eat healthy. This mashed cauliflower recipe absolutely satisfies my craving. Its a great side option and pairs well with roasted veggies, roasted chicken or a braised protein.

If you are trying to be more healthy cut out the butter and replace with olive oil. 

 

Ingredients

1 head of cauliflower
3 tablespoons milk
2 tablespoon butter
1 garlic clove
Kosher Salt

Freshly ground black pepper
1 tablespoon chopped chives

Serving: 2-4

Preparation

Separate the cauliflower into florets

Steam cauliflower till very tender, about 12-15 minutes. 

Drain and discard all of the water. Add cauliflower, milk, butter, garlic, salt and pepper in a blender and blend till smooth. I like to leave a little bit of lumps. 

Transfer to a bowl and top with chives and a dab of butter.
